  Eggplant Dip     




1 large eggplant

2 garlic cloves

1 medium onion

1 tbsp parsley

1 tbsp oregano

3 tbsp lemon juice

Olive oil for your type of consistency




Pan fry the eggplant to a golden color

Grate the onion or cut in 8ths




Add all in a blender and emulsified or pulverized which ever you prefer

Refrigerate after you enjoy as match as you can




 Enjoy and for now and in the future eat well
