 Okra Greek Style




2 lb okra

2 tbsp tomato paste

5 garlic cloves minced

1 cup olive oil

1 cup minced onion

½ cup red wine vinegar

Salt and pepper

3 cups water




Wash the okra and cut the stems back without cutting the head, place in a cooking sheet  sprinkle with salt and bath with vinegar all over and place in the sun for 1 to 2 hours depending on the sun’s intensity less if is hot.




Sauté the onions in the oil add garlic then add the delude tomato paste in two cups of hot water cook for 5 minutes add okra add salt and pepper and 1 more cup of water bring to boil cover and let simmer until all the water is gone.




 Enjoy and for now and in the future eat well
