 Potato Pan Cakes




4 medium potatoes

1 medium onion

2 eggs beaten

5 table spoons flower

1 tea spoon sea salt

½ tea spoon black pepper

Equal parts of olive oil and vegetable oil




In a bowl mix the eggs, flour, salt and pepper

Shred the onion on the course side of a grater

Peel the potatoes and place them in water so they don’t brown

Shred them on the course side of the grater as well, now you have to work fast mix the potatoes and onions place in a cheese cloth or some other cloth and squeeze out all the water. Now mix all the ingredients together




In a skillet wide enough add olive oil about ¼ inch high at list and get it hot now make little patties and place in hot oil very gently, I use a spatula and on the spatula I place one ice cream scoop full of the mixture then flatten and shape with a fork and then slide the patties in the hot oil fry till golden on one side then flip and golden the other side.

Place them when done in a vessel lined with at list three paper towels



 Enjoy and for now and in the future eat well
